Today (6th October), Cui Wen and i decided to bake cupcakes. Lemon cupcakes and i thought i'd just share the process and recipe with you guys!
You will need:
210g / 1½ Cup Plain Flour
1 tsp Baking Powder
¼ tsp of Salt
200g / 1 Cup Granulated Sugar
115g / ½ Cup Butter
2 Whole Eggs
¼ Cup Whole Milk
60g / ¼ Cup Sour Cream
2 tsp of Lemon Zest
1 tbsp Fresh Lemon Juice
½ tsp Vanilla Extract
Preheat your oven to 350c. When your butter is of room temperature, pour in the sugar and mix till a creamy consistency. Once done, add in the eggs and mix until fully incorporated. Then add in the sour cream, milk, lemon juice and lemon zest and mix well. In another bowl, whisk the flour, baking powder and salt. Slowly add in the dry ingredients to the first mixture to combine till a thick consistency. Lastly, add in the vanilla extract and mix well. Divide your batter into your lined cupcake tin and bake for about 20-22 minutes.
Next would be to make the frosting.
You will need:
288g / 1¼ Cup Butter
680g / 4 ¼ Cup Powdered Sugar
1 tbsp Vanilla Extract
2-3 tbsp Milk
For the frosting, whisk together the butter and sugar until a creamy consistency and add in the vanilla extract. For the milk, add in accordingly and it is really up to personal preference how you would like your frosting consistency to be like. Once done, you may choose to colour your frosting and check if your cupcakes are cooled then pipe on your frosting and enjoy!
